Description
What they do:
-Sanitation Pre-Op Inspection on a rotational basis with other QC Technicians.
-Check raw weights on all products hourly.
-Check cooked weights on all products hourly.
-Check internal temperatures of baked products hourly (HACCP/CCP #1).
-Random taste tests, shape checks, color checks.
-Check raw weights of cheese versus dough on all cheese pretzels intermittently throughout the shift (every 2-3 hours).
-Take temperature readings of spiralators and coolers hourly.
-Random check dough mixes from start to finish.
-Empty flour tailing bucket, check for foreign objects by sifting flour; to be done once per shift.
-Check designated sifter screens for holes or extreme fatigue; done once per shift. If a hole is found, product is placed on hold.
-Daily audits for Good Manufacturing Practices (GMP’s) and monthly Glass/Plastic Audits.
-Responsible for starting the paperwork process when any product is being placed ON HOLD. (This includes tagging up the product in question in the freezer).
-Monitor and document metal detectors hourly using 2.5 SS wand, 2.0 nonferrous wand, and 2.5 ferrous wand (HACCP/ CCP# 2). If detector is inoperable at time of check, product is placed on hold going as far back to the last OK metal detector check.
-Check all case codes, inner box codes, and date coders hourly.
-Check for count accuracy in cases hourly.
-Check glue pot temperatures and box glue seals hourly.
-Check retail check weigher hourly.
-1st shift / Monday morning start up – technician is responsible for preoperational swabs to validate our cleaning procedures.
-Mechanical Breakdown forms – whenever a failure occurs during the manufacturing process and it involves a food contact surface, it must be cleaned and sanitized prior to release for production. QC is responsible for this form.
-Sanitation Verification- QC is responsible for completing a verification form whenever a change-over occurs in the Cheese Room. A critical part of our Allergen and Sanitation program.
